As noted in my article on Making touched red roses and champagne, there are three different ways to the bubbles in sparkling wine or champagne. The first method was carbon dioxide, using the same method to a can of soda fizzy and also the cheapest method of producing sparkling wine. Method number two was the transmission method in which a sweetened base has yeast added and it is permissible for a second time ferment in a closed container so that the building CCarbon dioxide can not escape. After fermentation, the wine is clarified and then re-sweetened if necessary before being bottled under pressure. This method is used to produce medium price range sparkling wine. The last method and most complex of champagne method is used in creating the best quality wines. But what exactly is champagne method?
The champagne method begins with the first held fermentation in small oak barrels, either big steel vats with temperature orControls. The use of oak barrels is less common. After this first fermentation is complete, the wine is put through malolactic fermentation. This is when the wine growers hundreds of different batches of fermented wine from different vintages and grapes, and adds them together. The new mixture is then placed in a sealed bottle of wine, sugar and liqueur called "liqueur de tirage" and yeast. Fermentation takes place inside the sealed bottles from one tousually three years, creating an accumulation of carbon dioxide.
The dead yeast in the bottle to form a deposit on the bottom of the bottle and must be removed. It is important to note, however, that the European Union has decided that the term Champagne method can only be used in Champagne wines.
